Toilet Paper and Flour Are Back on Shelves; Time Still Stands Still

Many of you readers have been flexing your baking muscles with rolling pins. Dough hooks for the lazy!
Here is bread that basically makes itself. It's so easy. All you need is a
Dutch oven (such as a Le Cruesette), and if you have a mixer with dough hook--even easier, but not required. Add any kind of fresh or dried herbs. I happened to buy a couple lavender and rosemary plants on my last Costco run (after not scoring on the paper goods front!), so I chose those particular flavor enhancers. Here's to your bread.

INGREDIENTS
3 cups of all purpose or bread FLOUR
1/4 tsp instant yeast
1 1/4 tsp salt
1/2 t sugar
HOW TO
In a bowl, add flour, yeast and salt. Add 2 cups of warm water and with the dough hook attachment from your stand mixer, mix up the dough for about a minute, until it's sticky and shaggy. Cover with a piece of plastic wrap and let it rest for 12 hours. (I keep mine in a cooled oven). You can also mix any herbs at this point.
Put the bread on a floured surface and fold 2-3 times. Cover loosely with plastic wrap, wait 15 minutes and do this again. Shape dough into a ball, cover with a towel and let it rise for 12 hours. I keep mine in the oven (obviously, it's not turned on). Remove the bread bowl and heat the EMPTY oven to 450 degrees with your Dutch oven/ pot and lid inside. Remove the pot (carefully--oven mitts), add your ball of bread, seam side up. Use a sharp knife to score a
few star shaped lines, put the lid on and bake for 30 min. Remove the lid, bake another 15-20 minutes or until the bread is nice and golden. Let cool on a rack for a few minutes and then dig in! (During COVID #CarbsDontCount)
