GROOVY GREEN SMOOTHIE
Of course, I love to eat. As a food writer for Palm Beach Modern Luxury, I get to try some of the tastiest tapas in town. It's a tough assignment, but someone's got to chew it. In between dinners, I have to try and behave. That's why my Vitamix was one of the best investments (along with that pressure cooker I also wax poetic on). I can make gazpacho, smoothies and juices in no time.
Here's a cleansing, purifying and tasty smoothie. It's made with spirulina, a flavor I am not a fan of (let's be honest!), but that is so good for you. I promise that you barely taste it with all the other ingredients. Spirulina is a hydrocarbon vegetable loaded with vitamins, protein, minerals, folate, omega-3s and so many other important goodies! And it has the prettiest emerald green hue.
FYI: I don't juice, I blend because I prefer to have the fiber in my drink andthe extra space on my counter.

STUFF
1 cup water
1/2 cup pineapple juice
1 (non-heaping) tablespoon spirulina powder
1 handful of spinach (or other leafy green such as kale)
2 dates
1/2 cucumber
juice of 1 lemon/ lime
1 tablespoon of maple syrup (optional)
Handful of ice
Blend well. Drink cold! Your friends will be green with envy ...
