EGG IN A CUP
(a haiku)
Egg in a green cup.
Molten gold, white soft, sea salt
Crowned with basil flecks.
WHY:
It's the original superfood. At only 75 calories, one egg contains 7 grams of high quality protein, 5 grams of fat (3.5 unsaturated), disease fighting nutrients like lutein and zeaxanthin, and if memory serves me correctly, a shot of choline to potentially boost our memories.
For a time, the egg had been ostracized by foodies, but now it's enjoying its moment in the yolky limelight. Glad everyone got woke.
Here's a no-fail way to boil the perfect, buttery-soft egg.
INGREDIENTS:
1 large egg
salt and pepper, to taste
fresh basil, thyme or sage
HOW TO:
While there are 100 ways to whisk, boil, poach or fry this humble oval, all you need to do is submerge a large egg into boiling water for exactly 5 minutes. Rinse with cold water. Crack the top, add fleur de sel and perchance some fresh herbs and pepper .... and there you have a breakfast a nutrient and protein rich start to your day or an end to a busy day.
Bacon strip optional, for naughty mornings.
